Coconut Toastie

    oz Light
    Rum
  • 5
    tbl Vanilla
    Ice Cream
  • 1/4
    oz Whipped
    Cream
  • Shredded
    Coconut

Combine all ingredients (except coconut) in an electric blender and blend at a low speed for a short length of time. Pour into a chilled champagne flute, garnish with shredded coconut, and serve.
