Combine the ginger, sugar, honey, water, and lime juice in a large pot. Add the yeast and the egg white; stir to blend. Allow to stand in a cool, dark place for several days. When ready, strain through cheesecloth; add more sugar to taste, plus bitters. Bottle and refigerate until ready to use.
